Prosciutto Wrapped Frittata Muffin Recipe

Another recipe from my NomNomPaleo app! I was worried about this as I have only had prosciutto in a pasta recipe, so I wasn’t sure how it would fare being the main attraction in an egg recipe. But it blooms delightfully in this recipe, controlling the taste of the frittata, but not over-powering it.

Ingredients:

½ medium onion, diced

3 garlic clovesIMG_2344

½ pound of cremini mushrooms (I used white button mushrooms), thinly sliced

½ pound of frozen chopped spinach (I used 1 12 oz package)

4 tbsp of coconut oil

Kosher salt

Black pepper

8 large pastured eggs

¼ cup of coconut milk

2 tbsp coconut flour

12 pieces of prosciutto

12 cherry tomatoes

IMG_2345Pre-heat the oven to 375 degrees. Break out the muffin tin and grease it. Let me tell you, these suckers like to stick to the muffin tin while they cook, so grease this good. Then line them with prosciutto. They are ready for the egg mixture.

Next get out the frying, warm up some coconut oil and toss in the onions and cook them until they are soft and translucent. Then toss in the mushrooms and garlic. Cook until the moisture that the mushrooms release is gone. This doesn’t take too long. While veggies are sautéing, nuke the package of spinach for 30 seconds to warm it up enough for you to be able to man-handle it. And get out the ice. You will need to then squeeze the life from it, so that the spinach is as dry as possible.

Once the veggies are nice and cooked, remove them from the heat and put them in a plate or dish (anything really, just stop cooking it!). Then grab the eggs (hope they are room temperature, like I have taught you) and put the in a bowl and beat them. Then add the coconut milk, coconut flour, salt and pepper. Mix this well. The flour will try to avoid being mixed well into this, but beat out those lumps. You got this! Next–add in the veggies that are sitting in the plate/bowl and stir.

Once combined, pour the egg mixture into the prosciutto-lined  muffin cup. Put it in the over and cook for 20 minutes. Halfway, grab the muffin tin and turn it so the frittata cooks evenly. Once done, take them out and let them cool for a bit before removing from the muffin tin.
