Made the most amazing snack thanks to a fellow boot camper today!! I was nervous about it because I have never made anything with coconut oil, but holy heck, it was freaking delicious!!! And for your enjoyment, I took pictures along the way. So enjoy!
Combine the following ingredients in a microwavable bowl:
1/4 Cup Coconut Oil
1/2 Cup Raw/Unfiltered Organic Honey
1 1/2 Tsp. Vanilla
I microwaved it for 30 seconds and it turned out fine.
Once it was microwaved, the coconut oil was not 100% melted, but it was close enough.
Then I poured the following ingredients into the same bowl and mixed them all around:
1 1/2 Cups Pecans
1 Cup unsweetened Shredded Cocunut
2 Cups Slivered Almonds
1 Cup Walnuts
1 Cup Pinenuts
1 Cup Pumpin Seeds
1 Cup Dried Berries (like cherry/cranberry/blueberries)
1 Cup Milled Flaxseed
1/4 Cup Almond Meal
After I mixed them all together, I found they were coated really well with the first three ingredients and it was smelling pretty great.
I then put them on a tray and put them in a pre-heated oven that was set to 250 degrees. I cooked the mix for 25 minutes, then flipped the mix and cooked it for another 25 minutes.
At the end, it came out nicely–the coconut oil/honey/vanilla had come together nicely and the mix was chunky but not scary congealed. And it tasted like freakin heaven. I cannot wait to have this as a snack this week at work!!!
